Full report
12 days before APEC lands in Shenzhen, this is the dinner locals will actually tell you to book first.
Shenzhen does a lot of things loudly: drones, tech parks, 240-hour visa-free transit. Its best meal is quiet. Chaoshan beef hotpot (潮汕牛肉火锅) is a pot of clear beef-bone broth, a plate of beef sliced to order in front of you, and a small dish of shacha sauce. That's about it. Nothing about the dish shouts, which is exactly why people who try it once keep coming back.
Where the hotpot comes from
Chaoshan beef hotpot traces its roots to the Chaoshan region — Chaozhou, Shantou and Jieyang — and its history goes back more than a century, to the late Qing dynasty, when early versions used a shacha-based broth before today's clear beef-bone style took over. Shantou has listed the dish as a municipal-level intangible cultural heritage item.
None of those cities raise cattle themselves. The whole thing is a bet on freshness: cattle slaughtered daily, only about 37 percent of the carcass used for the premium cuts, and the beef sliced paper-thin in front of you. Shantou's Baheli Haiji, the chain that took the style national, built its own feedlot in Ningxia to control supply and now runs more than 200 stores across 24 cities — including Shenzhen.
The cuts, briefly
Ordering is half the experience. The menu names cuts by body part: diaolong (吊龙, the loin strip), chi ren (匙仁, shoulder), snowflake (雪花), neck hump (脖仁), wuhuazhi (五花趾, five-flower tendon) and xiongkoulao (胸口朥, a creamy white brisket slice that takes a few minutes). Regular cuts cook in eight to ten seconds. The broth is so light that the beef does all the talking.
How to order the first time
An ordering guide written in English, Spanish and French for first-timers gives a simple rule: for two people, start with two plates of sliced beef — diaolong is a good first pick — plus one order of hand-pounded beef balls and one plate of greens. Watch a lean cut and a fatty cut side by side, then add a third plate once you've seen the portions.
The beef balls deserve their own sentence: fresh leg meat pounded by hand for hours, with a Guangdong provincial standard requiring more than 90 percent beef content. They bounce. They're worth ordering even if you skip the meat.
Shenzhen specifics
Shenzhen has enough Chaoshan hotpot restaurants that Hong Kong food lovers cross the border just for dinner. Two names keep showing up in English-language write-ups: Baheli Haiji (八合里海记牛肉店) and Chenji Shunhe (陈记顺和). Search either in Amap or Dianping and pick the branch nearest your hotel. Chaoshan Damu (潮汕大目), near Huanggang Port, cuts beef behind a glass window and stays open until 3 a.m. — handy when your early dinner becomes a late-night project.
The value part
Menu photos from Shenzhen hotpot restaurants show a plate of premium snowflake beef at around CNY 58 (about $8). Add a broth, one or two plates of beef, beef balls and greens, and a couple eating well lands around CNY 120-200. Guangdong already leads the country in late-night dine-in spending, and Shenzhen is a big reason why.
